Snowpacolypse, Apple Oat Bars and A Giveaway, OH MY!

This is me yesterday, or rather how I felt on the inside:

Since I wasn’t going outside in this:

I stuck to more culinary endeavors on this surprise snow day!

Apple Oatties

Ingredients:

  • 1 & 1/2 cups rolled oats
  • 1/4 cup walnuts (any raw nut will do)
  • 1/2 cup golden raisins
  • 5 pitted dates
  • 1/2 cup almond meal
  • 1/2 cup whole wheat flour
  • 1/2 tsp. cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp. sea salt
  • 1/2 tsp. vanilla extract
  • 6 oz. Chobani nonfat honey yogurt
  • 3 lg. apples

Directions:

1. Heat oven to 350 degrees F.

2. On a dry baking sheet, measure 3/4 cup oats and walnuts. Spread evenly and toast in oven for 10 minutes, tossing occasionally.

3. In a food processor, or blender, chop the raisins and dates until a paste-like yumminess is formed.

4. Empty raisins/date mix into a large bowl, add the rest of the dry ingredients (including the other 3/4 cup oats) and combine.

5. Chop the apples into small cubes, toss into a separate bowl.

6. Add greek yogurt and vanilla extract to apple bowl and stir until apples are coated.

7. Dump the oven baked nuts and oats into the big bowl. Mix.

8. Pour the apple yogurt mixture into the big bowl and stir until combined.

9. Grease a 9X12 pyrex and empty the apple oat mixture into the pan.

10. Using clean hands, press the goodness into the pan forming a smooth-ish top layer.

11. Bake for 35 to 40 minutes, rotating the pan halfway through to encourage even cooking.

12. Allow to cool before cutting.

Try not to eat them all in one afternoon…

  4. I live in southern California, so we don’t have snow days. When I lived back in Tennessee, my favorite thing to do on a snow day was curl up in front of the fire with my kitty and a good book.

    Those bars sound great! I’ll had to add that to my ever-growing list of recipes to try. :)

      Thanks! Give them a try, some people like to add a little more liquid, maybe some almond milk. It really varies depending on humidity.

    When I stay inside on cold snowy days I love to spend my time cooking and baking. Wonderful for my inner housewife, not wonderful for my waistline.

      Right on. I have to keep my inner housewife on the lockdown or else I end up with tons of baked goods and flour in my hair.

  6. I like to curl up with a book and read. Then do some cooking/baking. And clean. And go for a walk or run in the snow. It almost never snows here so I like to get out in it when it does happen. :)

    I like to bake with my 4 boys on snowy days. We have lots of snow days here in MN so we tend to do a lot of baking! Monster cookies are our favorite to make!

    I don’t get snow days anymore since moving to GA almost 6 years ago, but my old favorite was get to my best friends house before it got bad and we always walked a couple of miles to the movies and played in the snow on the way home.

    My favorite way to stay busy on a snow day is to make some warm soup, bake some cookies & unfortunately, most likley clean the house! Snuggling up on the couch with a mug of tea or hot chocolate is a good way to “stay busy” too :)

  17. I tweeted about the giveaway, I follow Chobani on FB and how I like to spend a snowy day…first, I love to start by spending some time throwing snowballs outside with my dog then it has to be spending the day in the kitchen…

  18. My favorite way is to live in Florida. Okay, I do live in Florida but I’m moving to get into cooler weather. I know, I’m crazy! We were stuck in the snow at my parent’s place in mountains of North Carolina and we sled around the mountain on their property. Lots of fun!

    I’ve been using the snowy days home from work to catch up on cleaning and other things I’ve been putting off. I’ve also used them to watch some tv shows on Netflix- which was much more enjoyable!

  25. I’m in San Antonio, Texas so when we have a snow day (about once every 20 years) we bundle the kids up, put socks on their hands so they don’t fall off (no gloves here) and avoid the roads because no one has any idea how to drive when it’s snowing!
